Italian White Bean Soup from Heaven

I will try my very best to lay this out simple and easy.
I have made this soup five times now and there is never enough.

35 mins to make.

Heres the Ingredients:

  • 1 tbls olive oil
  • 1 lb of italian sausage ( I use beyond sausage and urge you to try it not because I don't want you eating meat because this soup is just fucking bomb and I wouldn't stray far from the instructions).
  • 1 yellow onion
  • 3 cloves of garlic (minced)
  • 3 carrots or 4 whatever (diced)
  • 2 stacks of celery (Diced)
  • 4 cups chicken broth
  • 1 tsp salt
  • 1/4 tsp crushed red pepper flakes ( after if you want more heat add more)
  • 2 cans of white beans (drain them) i would maybe add another half can.
  • 3 cups fresh spinach
  • 1 sprig of Rosemary ( take that out after)
  • 2 bay leaves (also take it out after)
  • 1 full fat coconut milk

So heres how I do her up.

1. In my soup pot heat the oil on medium and cook the sausage until its just about cooked
2. Add in the onion, garlic, carrot and celery. Cook for 3 mins or until the carrot is just about there. Its always last to cook.
3.add in chicken broth, salt, pepper flakes, beans, rosemary, and bay leaves. EVERYTHING that was left. bring to a boil and then simmer for 15 or so.
4. Take out the Rosemary and bay leaves because they taste like shit at random and presto.

Its definitely worth a shot, its rich and thick and just satisfying.

It's not that no one likes this soup. This recipe is ultra generic except for the addition of coconut milk, making this soup Thai.
Generic soup has sausage/prosciutto/bacon/anchovies for savoury,
bouquet garni and mirepoix,
dried bay leaves that goes in every soup,
optional spices (smoked paprika or chili flakes),
and the main filling: pasta, beans, greens, seafood, etc

Coconut milk is a nice addition though. Super decadent. But that's signature Thai thing, which doesn't matter I guess.
