Best meatballs you will ever eat-

1:1:1 Lean ground beef, ground pork and ground veal (use whatever meat you want)
Dried basil and oregano (add enough so that the meat smells “Italian”)
Salt (but go easy)
Pepper
The secret ingredient: shaved or grated FRESH Romano cheese. About 1 handful for 3 lbs meat (This adds umami and salt so careful with the actual salt)

mix thoroughly, with hands.
Form into manageable balls.
Slowly load balls as you roll them into simmering pasta sauce.
(best to use a big stock pot with homemade sauce) but store bought can work too- again just be careful with how much salt is in it.

once all balls are in pot- cover and let simmer at least an hour before you try to stir as the balls need to set.

then stir slowly after about an hour.
Continue simmering 2-4 hours to ensure sauce and balls are fully cooked and flavours incorporated.

you can skim off excess fat from top of sauce, or leave if you are bulking.

Slow cooking the balls in the sauce like this makes them juicy and tender and adds so much dimension to your sauce, you’ll never cook them any other way!
