Protein Oat Loaf/bars. GF, DF, SF, V

Lucky for me I have a wife that also lifts and loves to bake for us in a healthier style.. thought I would share one of her carb day snacks for us.

GLUTEN FREE, DAIRY FREE, SOY FREE, VEGAN (not that I dont eat meat, but in case you don't)
NOTE* bottles for size reference ;) loaf ready to cut into bars.

Simple recipe, mix all the below and throw it into a croc pot/slow cooker (we have a longer/wide style), lined with a parchment paper to make removal easier without breaking apart, cook for 2 hours on high! SIMPLE!!
*if you like it crispier, leave it slightly longer. Croc pot should be a longer (not taller) so it comes out about 1.5" thick in the pot.
Can also use *Oven at 325 for 25mins on cookie sheet like cookie style blobs too..

IMPORTANT**
DON'T fuck with it until its fully cooled or it will crumble, there isn't a lot of crap binders so unless its cooled it will fall apart. Once cooled, cut into roughly 8 bars or however big you want them and enjoy.

Nutrition per 100grams: 49c, 13p, 11f.

*amazing on my higher carb days with coffee 🤤

3 bananas (softer/riper is better so use up the old ones)
3 cups only oats (rolled oats)
1/4 cup earths balance soy free butter replacement
1/4 cup honey
2 tsp vanilla extract
2 tsp cinnamon
2 scoops vegan protein powder (whey would probably work but we dont do dairy :poop: lol)
1/4 cup dried blueberries (costco has these in bulk, sure other berries would be delicious too)
1/4 cup pumpkin seeds

That looks delicious man! I make some mean granola bars that look similar, but a very different recipe. Mine are quite as health conscious but a great carb boost pre gym. You’ve inspired me to share!
Nice touch sneakin in the vials. Lol!

sounds good and I just started introducing dairy back in with cottage cheese but am dairy free too (except a little cottage cheese) and use Vega Sport protein powder. It may be vegetable sourced but it doesn't make me bloat and tastes great. I prefer it over different kinds I tried.
I mostly use Progressive Harmonized Vegan Protein powder since can't do dairy, as found this to be the absolute lightest on the gut. Compared to Vega it also has a normal size scoop lol, but Vega is delicious.. I eat the Vega Sport Chocolate Mint Protein bar almost every day as a coffee snack

Going to make this. I have all the ingredients already. I eat pepitas and fruit everyday, sound delicious. I will use vanilla whey protein*

Let me know how it goes! I tend to cook mine on the longer side as I prefer mine crunchier/dryer rather than granola bar style ;)
